VARIETY

100% Tinto Fino from goblet pruned old vine-stocks.

ELABORATION

In the middle of October we manually harvest the grapes and place them in boxes, before the table selection. From there the pulp is transferred to stainless steel containers where it undergoes temperature-controlled fermentation. Once the alcoholic fermentation is finished, the wine is macerated with its skins for 25 days, followed by separation and malolactic fermentation at 20 º C. At the end of the process the wine will obtain an alcoholic grade of 13.5% vol.

AGENING

The wine is transferred to new American Oak casks in December, and aged for 12 months. During the first four months, the wine remains in contact with fine leas, before its first transfer.
